Instructions

Preheat the oven to 350 degrees.
In a medium bowl, stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. Fold the floured strawberries gently into the batter.
Pour the bread batter into a greased 9″x5″ bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
To make the glaze, combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth.
Once the bread is cool, spread the glaze on top of the bread. Slice and serve.

🍓 Helpful Tips & Easy Substitutions

Getting the perfect strawberry bread doesn’t require perfection—just a few thoughtful tips can make all the difference.

  • Use fresh strawberries when possible: They bring the best flavor and texture. If using frozen, thaw and drain them well to avoid excess moisture.
  • Don’t overmix the batter: Stir just until combined to keep the bread soft and tender.
  • Oil vs. butter: This recipe uses oil, which helps keep the bread moist for longer. You can substitute melted butter for a richer flavor if you prefer.
  • Extract choice matters: Vanilla gives a classic sweetness, while almond adds a slightly nutty, bakery-style twist.
  • Add-ins: A handful of white chocolate chips or chopped nuts can add extra texture and flavor if you want to experiment.

❓ Frequently Asked Questions

1. Can I make this recipe without the glaze?
Absolutely. The bread itself is flavorful and moist on its own. The glaze just adds an extra layer of sweetness.

2. Why do I need to coat the strawberries in flour?
This helps prevent them from sinking to the bottom of the loaf and keeps them evenly distributed.

3. Can I use whole wheat flour instead of all-purpose flour?
You can substitute part of it (about 50%), but using all whole wheat may make the bread denser.

4. How do I know when the bread is fully baked?
Insert a toothpick into the center—if it comes out clean, it’s ready. If there’s wet batter, give it a few more minutes.
