For many of us, school pizza wasn’t just food. It was part of a routine, a highlight of the week, and sometimes even the reason you looked forward to lunch break. 2 T sugar
1 package quick rise yeast
1 tsp salt
1-2/3 cup warm water (110-115)
2 T vegetable oil

Filling:
1/2 lb Italian sausage
1/2 lb ground chuck
1/2 tsp pepper
1/2 tsp salt
1 (8oz) block mozzarella cheese

Sauce (I make the day before):
1 (6oz) can tomato paste
1 1/2 cups water
1/3 cup olive oil
2 cloves garlic minced
1 t salt
1 tsp pepper
1/2 T dried oregano
1/2 T dried basil
1/2 t dried rosemary

Steps

Crust:
Preheat oven to 475.
Spray 18 x 13 sheet pan with Pam and lay parchment paper down.
Add flour, powered milk, sugar, yeast, and salt to a large bowl. Whisk to blend.
Add oil to warm water. Pour into flour mixture. Stir with a wooden spoon until batter forms. Don’t worry about lumps – you just want no dry spots.
Spread dough onto sheet pan with fingertips until even. If the dough doesn’t want to cooperate then let it rest for 5 min and try again.
Bake just the crust for 8-10 min. Remove from oven and set aside.

filling:
Brown meats (add salt and pepper) until it resembles crumbles. Drain, set aside.
Get out sauce.

To partially baked crust assemble:
Spread sauce all over crust.
Sprinkle meats.
Sprinkle cheese.
Bake at 475 for 8-10 min. Until cheese starts to brown.
Let stand 5 min, cut into slices and serve.

Cooking Tips & Substitutions

This recipe is wonderfully forgiving, but a few smart tips can help you get that authentic school cafeteria texture and flavor. First, don’t overthink the dough. It’s meant to be soft and slightly sticky—that’s what gives it that classic, tender bite instead of a crisp pizzeria crust.

If your dough resists spreading, just let it rest like the instructions say. That short pause relaxes the gluten and makes everything much easier. Trying to force it will only frustrate you—and ruin the texture.

For the meat topping, you can easily adjust the ratio. Prefer a leaner version? Swap the ground chuck for ground turkey. Want a bolder flavor? Use spicy Italian sausage instead of mild.

The cheese is another place to experiment. While mozzarella gives that classic stretch, adding a bit of cheddar or Monterey Jack can deepen the flavor. Just don’t overload it—you want balance, not a greasy mess.

Serving Ideas

This pizza is perfect for casual meals, family dinners, or even game nights. Cut it into squares for that authentic cafeteria feel, and serve it with a simple side salad or some roasted vegetables.

It’s also great for feeding a crowd. The large sheet pan makes plenty of servings, and it’s easy to double the recipe if needed. If you’re hosting, you can even prepare the components ahead of time and assemble just before baking.

For a nostalgic twist, serve it with classic sides like apple slices or a cold drink—simple, familiar, and satisfying.

Storage & Freezing Tips

Leftovers (if you even have any) store very well. Keep slices in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for the best texture—microwaving works, but it softens the crust.

To freeze, let the pizza cool completely, then wrap individual slices tightly. Store them in a freezer-safe container for up to 2 months. When ready to eat, reheat مباشرة in the oven until warmed through.

If you’re planning ahead, you can also freeze the partially baked crust and add toppings later for a quick homemade pizza night.
