Piña Colada Cake
Ingredients
1 white cake mix (I prefer Duncan Hines)
3 eggs
1 cup water (or what the cake mix calls for)
8 oz sour cream (also oil replacement)
1-15 oz can Coco Lopez Cream of Coconut (replaces oil) stirred well and divided
Coconut, 1 cup or so
Chopped pecans, half cup
4 oz. cream cheese. (I’ve been know to use the whole block just to keep from putting it back in the fridge!)
4 cups powdered sugar
Directions
Heat oven to 350.
Put cake mix, water, 3 eggs, 8 oz sour cream and 10 oz of Coco Lopez together. Mix well. About 4 minutes. Spray a 13 x 9 pan with Pam or other cooking spray. Put 1/2 cup of coconut in bottom of pan, then sprinkle chopped pecans over coconut. Pour cake mixture over top and bake for 30 minutes or so, whatever your cake mix tells you for a 13 x 9 pan. Cool, then turn out onto a sheet cake cake plate. Cool completely.
Icing
Mix 4 oz. cream cheese, rest of Coco Lopez (5 oz.) in a mixing bowl. Add 4 cups powered sugar. Mix well, pour over cooled cake and spread. Sprinkle rest of coconut over top and sides using more coconut if needed. Can add chopped pecans to icing if desired.
Helpful Baking Tips
For the best results, allow all refrigerated ingredients to come to room temperature before mixing. This helps create a smoother batter and a creamier frosting.
Be sure to stir the cream of coconut thoroughly before measuring it, as it naturally separates in the can. This ensures the rich coconut flavor is evenly distributed throughout the cake.
When cooling the cake, give it plenty of time before adding the icing. A completely cooled cake helps the frosting stay thick and smooth instead of melting into the cake.
If you’d like a prettier presentation, garnish the finished cake with lightly toasted coconut flakes or a few whole pecans around the edges.

Easy Variations and Substitutions
Although this recipe already delivers wonderful tropical flavor, there are plenty of ways to make it your own. Toasted coconut adds a slightly nutty flavor and extra crunch. If you enjoy a little more texture, mixing chopped pecans into the frosting creates an even richer finish.
Fresh pineapple chunks served alongside each slice complement the coconut beautifully without changing the recipe itself. A few maraschino cherries on top also make the cake look festive for parties and celebrations.
If pecans aren’t your favorite, walnuts can provide a similar crunch while keeping the dessert delicious.
Serving Suggestions
This Piña Colada Cake is perfect for summer cookouts, family reunions, birthday parties, bridal showers, baby showers, potlucks, holiday meals, and weekend gatherings.
Serve each slice chilled or at cool room temperature alongside coffee, iced tea, lemonade, or tropical fruit punch. The refreshing coconut flavor pairs wonderfully with fresh fruit such as pineapple, strawberries, or mango.
Because the cake is baked in a 13 x 9-inch pan, it’s easy to slice into generous portions for sharing with a crowd.
Storage and Freezing Tips
Store leftover cake covered in the refrigerator due to the cream cheese icing. It will stay fresh for up to five days when stored in an airtight container.
If making the cake ahead for an event, prepare it the day before serving. The coconut flavors continue to develop overnight, making the cake even more delicious.
To freeze, wrap individual slices tightly in plastic wrap followed by aluminum foil or place them in freezer-safe containers. Freeze for up to three months and thaw overnight in the refrigerator before serving.
Frequently Asked Questions
Can I make this cake in advance?
Yes. This cake is an excellent make-ahead dessert and often tastes even better after chilling overnight.
Why is cream of coconut used instead of coconut milk?
Cream of coconut is sweetened and much richer than coconut milk, giving the cake its signature tropical flavor and moist texture.
Does the cake need refrigeration?
Yes. Because the icing contains cream cheese, the finished cake should be stored in the refrigerator.
Can I decorate the cake further?
Absolutely. Additional coconut, toasted coconut flakes, chopped pecans, fresh pineapple slices, or maraschino cherries all make attractive garnishes for special occasions.
