Southern Squash Casserole

Ingredients

4-5 reg squash cut into circles

1 large sweet onion cut into small pieces

2 T bacon grease or butter

Snp to taste

2 cups shredded cheddar cheese

1 can cream of mushroom or chicken soup

1/4 cup mayonnaise

1 can evaporated milk

3 eggs

2 sleeves saltine or ritz crackers

1 stick butter

Instructions

Boil squash and onion in bacon grease or butter in about 2 cups water just til softened.

Drain!!!!! Well !! Drain !! Well!! lol

In a separate bowl mix together the soup , eggs, milk, mayo , cheese and seasonings of your choice … snp are just fine!

Add the drained squash to the wet mixture and pour into a 9×13 baking dish ( sprayed or greased)

Take the crackers and crush them into small pieces and pour 1 stick melted butter on top of them …

Sprinkle the crackers mix over the casserole and bake 350 for 35 minutes
